Ingredients for the Citrus Syrup (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Method
Making the Citrus Syrup: Put all the components inside a saucepan, bring to a light boil, mixing until the sugar dissolves. After that, remove from the stove and leave to cool fully. Pour into a sealable bottle, close it and store in the refrigerator, it can be stored for up to a month.
For the Batch Mix: Combine every spirits and syrup into one large bottle, let it rest for 60 minutes, then filter it best through cheesecloth, making it fully clarified.
When ready to serve: Pour 85ml of the premix to a stirring glass containing ice, and agitate carefully for a minute to cool it down. Filter into a cold coupe glass or a similar vessel, decorate with some cranberries and finish by giving it a light spray of mandarin oil above the glass.
